I'm at the moment looking up another guy. Gary McKill. He's not credited for guitar but he composed some rock tracks for some games.

The PC game "Full Throttle" had a licensed soundtrack, but it was mostly based on The Gone Jackals' "Bone to Pick" album, and boy, is it awesome! I've been looking up a guy named Dave Lowmiller. The reason is because he was vocalist for a short-lived industrial metal band called A Dark Halo. ADH are most famous for their two songs Burn It All and Beyond Recall being on WWE Day of Reckoning 2. I became a big fan of their work. I decided to go back and look at the music on that game. It has a somewhat generic (Not saying its bad, but obviously not prepared to be something great. It's all menu music actually.) instrumental industrial metal soundtrack (Along with the two ADH songs). I discovered that Dave along with ADH guitarist Chris Jones did the soundtrack.
Due to the nature of Gamecube disks there are no audio clips of the music online. (Not saying that stops people, just it takes a bit more effort to get the stuff.) I'm thinking about seeing if I can record the audio so I can upload.
The music on WWE DoR2 has its moments. Worth sharing I think.
Anyway.... I found that Dave did music for other games.
It probably has other stuff going on too.
A Dark Halo have some seriously awesome music. Unfortunately they disbanded. The music is easy to find online. Enjoy!
UPDATE: Dave Lowmiller now works at EA Games/Visceral Games as a sound designer. Most notable game being Dead Space.

I've been so busy/asleep for so long, that I haven't had time to post anywhere. I have, however, found plenty of gems online for you guys.
The Shooted~Dead Or Alive Dimensions
Dead Or Alive Dimensions is one hell of a fun game! For most of the plot important characters, they remixed their most iconic theme songs. Understandably, most of those remixes come from Dead Or Alive 2. This is one of the best DOA2 remixes IMO.
Carrier Zone~Sonic & All-Stars Racing Transformed
You can always trust AfterBurner to have AWESOME rock music, and this remix from All-Stars Transformed is absolutely awesome! The best part is that the beginning of the track it appears on involves everyone driving off of the landing strip of an aircraft carrier and transforming into planes in time to the opening of the song! SO EFFING SWEET!
Advanced Track Remix~Super Monkey Ball: Bananna Blitz
Bananna Blitz had a lot of remixes from previous Monkey Ball games, and this track is a remix of the Advanced track music from Monkey Race 2 in Super Monkeyball 2. What was originally a techno track is given a completely awesome remix as a rock song!

Necrobump!
I recently got on a fighting game kick and picked up Persona 4 Arena (becuase, you know, Persona.) Holy balls the soundtrack kicks ass! Showing that even recent games (and by recent I mean 360/PS3) can still have great rock soundtracks.

I don't think someone mentioned it, but... Moto Racer 1! That game has insane soundtracks! They're even more insane than Jet Moto's soundtrack! Listen to this, the first track in the game, Speedbay's music :

Cool stuff here. I was worried I had to be the first to bring up Guilty Gear; thanks CaMac! That being said, I'm surprised no one mentioned F-Zero. Aero Elite: Combat Academy (otherwise known as Aerodancing 4) also has some pretty sweet tunes.
